The Bay Area's Wood Tavern restaurant is known for locally sourced ingredients- in this short rib sandwich, they use nearby Acme Bakery's sweet deli rolls. These rolls are the chewy pillows that make this meal superb: If it weren't for them to soak up the cascade of braised short rib juices, this lunch would've been a stew!
