Fresh trout, "food of the gods," is prepared any style at this mountain restaurant in the heart of the Cocora Valley (300 yards down from the trailhead to Reserva Natural Acaime). The pounded plantain was the first I had seen, and the anise-flavored Aguardiente cleansed the palette and raised the senses!
