An enormous fish is filleted, rubbed with achiote (a traditional Mayan spice) and grilled. Order tikin xic ("teek in cheek") and you'll get a cafeteria tray loaded down with amazing white fish a bit lighter than swordfish, a stack of tortillas & limes.
