We saw street vendors all over Beijing crafting this breakfast (or anytime) treat. The peddler makes a large batter crepe, adds a fresh-cracked egg and some hot sauce and scallion, lays on a rectangular puffy-crunchy wafer, and then folds it all up. An explosion of flavors and textures.
