The Red Iguana is a colorful Mexican eatery with multiple locations that’s an absolute must in Salt Lake City. And if you come here, you gotta get mole. There’s lots to choose from, but we went with the enmoladas because we needed something quick and easy -- we literally called it in and picked it up en route to the airport. And I don't regret it! The enmoladas are triangles of corn tortillas filled with refried beans and topped with a lot of mole negro, plus cheese and pickled red onions. The sauce is LEGIT, super rich and deep and very spicy. Just layers of flavor. We couldn't stop eating it.
