Japanese influence is strong in Hawaii, and nowhere is it more obvious than in the use of pristine local seafood at sushi restaurants. Negihama tarar is green onions, chopped tuna, and a quail egg. The soft ingredients become a paste which can be wrapped in crisp nori seaweed for a textural contrast and a study in excellent flavor.
