Falafel is made of ground chickpeas that are deep-fried. I found this one outside the Carmel Market in a tiny storefront that only has 2 stools (luckily there is a park right across the street). The falafel was made to order, so it was hot and fresh and not at all greasy. Don't skimp on the fixings, like pickles and chopped salad.
