Sikil pak, or pumpkin-seed dip as your server will tell you, is a traditional Mayan spread, served gratis with tortilla chips at many Yucatecan restaurants (like this excellent one in Cancun). It's delicious! Thick, creamy, nutty--really a unique dish to the area.
