Cochinita Pebil

Cochinita pibil is my favorite Mayan food. This tender pork dish is marinated in achiote and bitter orange and then slowly roasted in a banana leaf. It can be found across the Yucatan peninsula everywhere from elegant courtyard restaurants to roadside taco joints. It's good everywhere!
