Ceviche is the food of choice in the Yucatan--fresh raw octopus & shrimp chopped up and marinated in lime, with maybe a few tomatoes, onions, cilantro thrown in. The lime cooks it and makes a delicious, fresh dish--at El Camello it is enormous!!
