Birria is a broad term for a type of meat, mostly served as a taco. Birria stew consists of that meat, with a few scoops of rich broth added plus chopped onions and cilantro. This scrappy food cart in Mexico City has the best we ever tasted. Take the Metro orange line to San Antonio station; Tacos El Paso is at the street entrance to the station.
