Chicken feet with the nails removed and boiled with a bit of salt until tender, drained and rinsed. Blended garlic, local herbs, lime juice and hot pepper is then added along with sliced lemon and cucumber and placed in the refrigerator until chilled and served like soup. The result is a gelatinous base with a spicy, pickled-flavor sauce.
