Asopao is the puertorrican version of gumbo. This one is made with shrimp, rice and flavorful herby broth. We had this asopao on a perfectly rainy day at Hacienda Gripiñas, which is located in the beautiful central mountains 3,000ft above Jayuya. The restored hacienda is 200 years old and serves as a guest house, restaurant and coffee plantation.
