Banh Khot are miniature rice pancakes. In Vung Tau, they are known for making banh khot hai san, which is a rice pancake with seafood in the center with crushed shrimp sprinkled across the dish. Banh khot is tricky to make because the timing in cooking it is important. At the little mom and pop shop, they made it perfectly.
