Originating from the Fujian/Chaozhou province, the oyster omelette is now popular in various parts south of China, popular in Taiwan and Singapore (also known as ou luak in hokkien, the Fujian dialect) The seafood stalls on temple street do a different rendition, fried in egg and batter instead of a wet or dry omelette. It's delish.
