Diced eggplant, fried until buttery tender, seasoned with a super amount of garlic. Heavy for a vegetarian dish, but incredibly tasty as it melts in your mouth. It's most commonly eaten as appetizer in Cantonese cuisine (in this case in Hong Kong), or side dish along staples such as rice and noodle preparations.
