As a chain of islands in the Indian Ocean, the Seychelles is blessed with an abundance of fresh seafood. As a legacy of laborers/immigrants from India, kari (or curry) is a national dish. It's a mild curry which allows the freshness of the fish shine through. It's served with basmati rice.
