This is a gratin (casserole) made of chouchou, otherwise known as chayote, the main crop grown in the Cirque de Salazie, one of Réunion's three Cirques (calderas). Residents of Salazie bake chouchou into gratins, salads, and even in sweet gateaux. It tastes something like yellow squash, and in this dish takes on the flavors of cream and cheese.
