Everywhere we went in Ethiopia we'd ask if they had the fasting menu, which included lentils prepared in different ways, beets, green beans, greens, potatoes/carrots/cabbage and other veggies. AMAZING. This is eaten during various holidays, such as the 2 wks preceding Easter, when meat and animal products are prohibited by the Orthodox Christians.
