Ethiopia’s hallmark dish is doro wat, a stew of chicken and eggs flavored with berbere, a spice mixture of coriander, cumin, cardamom, chilies, cloves, fenugreek, cinnamon, ginger, turmeric, nutmeg, and allspice. Some traditional preparations begin with the slaughter of a chicken that is cut into 12 parts.
